Fennel green tea is one of my favorite drinks, whether hot or cold. Brew up a glass on cold winter evenings to reduce stuffiness and congestion, or make a gallon at a time to cool you down during the hot days of summer.
Ingredients:
(for one cup)
1/2 to 1 tsp fennel seed
1 green tea bag or 1 tsp loose leaf green tea
1 tsp organic sugar
honey to taste
(for one gallon)
1 to 2 tbsp fennel seed
8 green tea bags
1/4 cup organic sugar
honey to taste
1) Bring 1 to 2 cups water just to a boil. Add fennel seed; reduce heat to low and cover. Let simmer gently 10 to 15 minutes for one cup, or about 20 minutes for a gallon.
2) Add tea leaves and let steep about 5 minutes.
3) Add sugar and honey. Enjoy!
This tea would obviously be much healthier if you skip the sugar and just use honey, or a combination of honey and stevia, but I find that a little bit of organic sugar really mellows out the honey taste. You can read this post to learn more about the dangers of refined sugar.
